Today their efforts are increasingly focused on producing their own exceptional wines, such as Florpower, that truly express the character of Sanlúcar and its unique terroir. The base wines come from Colet’s certified organic vineyards and undergo secondary fermentation in bottle. Its southern influence appears in both the fermentation approach and the distinctive wines used for dosage. The Chardonnay-led base wine, with a touch of Palomino Fino, is aged for an extended 41 months before disgorgement. Fully dry, it contains virtually no residual sugar.
